This sauce was super tasty and goes great with everything – pasta, chicken and pizza!

Having a Vitamix
We’ve had our Vitamix for about a year and a half. We get a lot of use out of it and enjoy cooking with it. We use it everyday for smoothies but only occasionally for sauces, soups, hummus, and cauliflower rice. However, with the ease that our new Christmas present brings to making the latter recipes, we may be adding more and more to our Vitamix repertoire.
Add the Vitamix spatula to your “Must Get” list or your Christmas list like we did. It’ll make using your Vitamix more enjoyable and get more use out of your recipe.
Using a Vitamix to Make Sauces

We made this Kale Pesto recipe numerous times but it was so much more enjoyable using the spatula. Check out the recipe below which can also be made with a food processor. We normally serve this pesto sauce over fresh made pasta or raviolis from a local establishment, Severino Pasta. This time we made Naan pizza with rotisserie chicken, tomatoes, goat cheese, and pesto sauce. YUM!
Kale Pesto Ingredients:
- 1 ½ cups destemmed kale, shredded
- 1 ⅓ cups fresh basil leaves
- 4 garlic cloves
- ½ cup walnuts
- ¾ cups Parmesan cheese
- ⅓ cup extra-virgin olive oil
Add the first 6 ingredients to your Vitamix. Set the Vitamix on 2 or 3 and mix until smooth. You may need to shut off the Vitamix a few times to push down the sides using a spatula. If you are using a food processor, pulse the mixture a few times until smooth. Again, the sides may need to be pushed down a few times with a spatula.
- 2 tablespoons butter
Kale Pesto Sauce using Vitamix - ¾ cup almond milk (or regular milk)
- salt and pepper
- red pepper flakes (optional)
Heat a large pan over medium heat and melt the butter. Whisk the milk in and continue to stir and cook for 2 – 3 minutes. Add the pesto sauce (this part made super easy with the Vitamix spatula), salt, pepper, and red pepper flakes. Enjoy over your choice of pasta or pizza!
